The basic principles of Ayurveda can be found in its name, which in Sanskrit means "longevity" (ayus) and science (veda). Overall, balance within the body is emphasised through moderation of such things as sleep, sexual activity, medicine and last but not least, food. The last, food is an important feature in Ayurvedic practice and as such, all herbs and plants are purported to have various uses and characters.

Bring filtered or freshly drawn cold water to a rolling boil (100ºC). Let water cool slightly. Place 1 teaspoon of loose tea for each 7-9oz / 200-260ml of fluid volume in the teapot. Pour the water into the teapot. Cover and let steep for 3-7 minutes according to taste (the longer the steeping time the stronger the tea).
